Make your own super-simple parma!

Your super simple chicken parma recipe!

What you’ll need:

  • 4x 170g chicken breast fillets
  • 2 garlic cloves, finely chopped
  • 1 onion, chopped
  • 400g chopped tomatoes
  • 140g fresh breadcrumbs
  • 40g grated parmesan
  • 80ml olive oil
  • 1 tbsp tomato paste
  • 1 tsp fennel seeds
  • Steamed vegetables, to serve

Here’s what to do:

Step 1.

Preheat the oven to 200 degrees Celsius. While the oven is preheating, place 2 tablespoons of olive oil in a saucepan on medium heat. Add breadcrumbs and cook, stirring until they are golden-brown. Cool slightly and season to your preference, add some parmesan and parsley then remove from pan and set aside.

Step 2.

Using the same pan, cook onion and garlic while stirring for up to 3 minutes, or until soft. Add the tomato paste, fennel seeds and cook until fragrant. Add tomato, a pinch of caster sugar and 60ml of water and allow to simmer, stirring occasionally for up to 10 minutes, or until thick.

Step 3.

Using an ovenproof frying pan, heat 1 tablespoon of oil over medium-high heat. Season your chicken and cook for 5 minutes, turn the chicken over and cook for another 2 minutes until golden. Transfer to the oven and bake for 5 minutes. Take out the pan, spoon the sauce over each fillet and top with parmesan or your preferred cheese topping. Cook for a further 3 minutes until the cheese is melted and the chicken is cooked through. Remove from oven, plate up and sprinkle breadcrumbs over the top; it’s ready to serve! Enjoy!
