Why Christmas Ham?

Have you ever wondered where the tradition of serving ham started? Apparently, historians suggest that it dates back to medieval times as a tribute to one of the most important Nordic gods, Freyr. It was hoped this would bring a favourable harvest and increased fertility for the coming year.
While we may not have to go out and hunt our own boar for Christmas, it can be just as difficult to prepare a feast for your entire family. This is especially true when celebrating Christmas on a blistering, summer day. We’ve found a mouth-watering recipe that you can easily cook on the backyard barbeque.


Sticky Lime Glazed Ham Recipe

Sticky glazed christmas ham
Ingredients

  • 7 kilogram leg of ham, cooked
  • 500 gram jar of lime marmalade
  • ½ cup of firmly packed brown sugar
  • 2 garlic cloves, crushed
  • 1 long red chilli, deseeded & finely chopped
  • ½ teaspoon of Chinese five-spice power

Optional: Sliced limes to place on top of or around the ham


Method

  1. Preheat your barbeque on a high setting, with the hood closed.
  2. Using a small, sharp knife, cut through the ham rind about 8cm from the shank.
  3. Staring from the opposite end of the shank, run your thumb underneath the rind to separate from fat. Peel back the rind and remove.
  4. Lightly cut a diamond pattern into the ham fat, no deeper than 5mm.
  5. Place the ham on wire a rack in a large, disposable foil-baking tray.
  6. Combine marmalade, sugar, garlic, chilli and five spice in a bowl.
  7. Spoon half the mixture over the scored surface of the ham.
  8. Reduce heat to a medium setting. Cook the ham using indirect heat* for 30 minutes, with the hood down.
  9. Carefully spoon over the remaining marmalade mixture.
  10. With the hood down and using indirect heat, cook the ham for another 45 minutes or until caramelised and slightly charred.
  11. Remove from the barbecue and set aside for 15 minutes, covered with foil.

*Note: Turn burners on 1 half of the barbeque to the required temperature and place the ham on the unheated side.
